Strawberry Panna Cotta with Pomegranate Juice
Panna cotta is a classic Italian dessert that is only made better by one thing: Strawberries!
In this recipe, we mix sweet strawberries with fresh pomegranate juice for a beautiful combo that you and your guests will love!
Ingredients:
Strawberry Puree:
700 g strawberries
3 dl pomegranate juice
25 g gelatin powder
Panna Cotta:
6 dl milk
25 g gelatin powder
70 g sugar
5.5 dl heavy cream
1 tsp vanilla extract
Fresh strawberries, for topping
Instructions:
Put the strawberries in a blender and blend until you get a smooth puree.
Pour pomegranate juice and gelatin powder into a saucepan and mix well. Then heat the mixture (do not let it boil) while stirring.
Pour the mixture into a measuring cup along with the strawberry puree.
Lay a kitchen towel over a muffin tray, and place six glasses at an angle in the muffin molds.
Pour the strawberry mixture into the glasses and cool in the refrigerator for at least two hours.
Mix milk and gelatin powder in a saucepan, and heat up without letting the mixture boil.
Add sugar and stir until the sugar dissolves. Then remove the saucepan from the heat and mix in heavy cream and vanilla extract.
Allow the mixture to cool to room temperature before pouring it over the glasses with the strawberry puree.
Cool for at least four hours, and then garnish with fresh strawberries on top. Enjoy!
