How to make a soft and fluffy Penny Rolls.
Here's what you'll need:
1 cup water (250ml)
1 egg
2 tbsp sugar (30g)
2 tsp instant yeast (6g)
1/4 cup powdered milk (33g)
3 and ½ cups bread flour or all purpose flour (437g)
1 tsp salt (5g)
1/4 cup butter (55g)
Topping: some butter and sugar
1. In a bowl, mix together water, egg, sugar, yeast and powdered milk.
2. Add flour and salt. Mix until the dough is formed.
3. Add softened butter, mix until butter is fully absorbed.
4. Transfer to a lightly floured counter then knead, slap and fold until smooth.
5. Smooth the dough into a ball and place in an oiled bowl.
6. Cover for 50-60 minutes until doubled in size.
7. After proofing, punch the air out. Transfer to the counter.
8. Divide into 16 equal pieces. Roll into a ball.
9. Place in a greased 10 inch baking dish. Cover for 20 to 25 minutes. Preheat oven at 170C/350F at this moment.
10. Bake for 22 to 25 minutes.
11. Let it cool down a bit.
12. Brush with softened butter and sprinkle with sugar.
