Cooking recipe and ingredients:
Pumpkin 800 g.
Cook the pumpkin over medium heat until soft.
Instant gelatin 20 g.
Instant gelatin 10 g.
Add 100 ml water to 20 g gelatin.
Add 50 ml of water to 10 g of gelatin.
Mix.
Let the gelatine swell.
Zest of a lemon.
Pour boiling water over it for 3 minutes.
Squeeze the juice of a lemon.
We need 90 ml. lemon juice.
Cooked pumpkin – 630 g.
Add 1 pinch of salt.
2 tablespoons honey.
Add lemon zest.
Add lemon juice.
Grind the mixture with a blender.
300 g cottage cheese.
100 g natural yogurt or sour cream.
Add 2 tablespoons of honey.
Add vanilla extract.
Grind with a blender.
Melt 20g gelatine in the microwave for 25 seconds. Gelatin should not boil!
Add melted gelatin to pumpkin mixture.
Mix.
Melt 10 g gelatine in the microwave for 15 seconds. Gelatin should not boil!
Add melted gelatin to the curd mixture.
Mix.
Grease the form with vegetable oil.
Form the cake in alternating layers, adding three tablespoons of each mixture.
Gently spread remaining pumpkin mixture over entire surface without pressing.
Cover with cling film.
Place in the refrigerator for 4-5 hours, preferably overnight.
