Ingredients (3-4 servings 🍝):
350 g (10 oz) spaghetti (drum wheat)
Cook al dente
olive oil
1 onion, finely chopped
3 cloves of garlic, crushed and chopped
1 eggplant, diced
1 pepper, diced
7 mushrooms, diced
2 tbsp tomato paste
400 g (2 cups) tomato paste
Salt, pepper, paprika
Herbal mixture
fresh parsley, chopped
✅ Use the pasta water to thin the sauce!
✅ Serve as soon as you mix the sauce with pasta!
