Ingredients
2 red peppers
1 yellow pepper
130 g of pennoni rigati
2 cloves garlic
anchovies in oil
Taggiasca olives
tuna fillets in oil
salted capers
chili
parsley
basil
extra virgin olive oil
Preparation:
Cut the peppers in half and place them on a baking tray lined with baking paper. Pour a little oil and put in the oven at 200° for about 30 minutes.
While the peppers are cooking, heat the salted water to cook the pasta.
When the peppers are cooked, remove the skin and seeds with a knife.
It's time to cook the pasta, I chose pennoni rigati but you can use your favorite pasta.
Place the peppers, some basil leaves, oil in a container and blend everything.
Now put a drizzle of oil, garlic, anchovies in oil, parsley stems, some salted capers (rinsed under water to remove excess salt) in a pan and fry for a few minutes. Add some Taggiasca olives and finally the chilli pepper.
Now add the pepper cream, remove the parsley stems and the garlic.
Place the cooked pasta in the pan and add a little cooking water to mix the cream.
Lastly, add the tuna, stir-fry a little to add flavor and add the chopped parsley.
The pasta is ready to be served and eaten!
