Choux Pastry:
♥ Water 200ml
♥ Salt 4g
♥ Unsalted butter 80g
♥ 2 large eggs
♥ Flour 120g
Cream Filling:
♥ Milk 450ml
♥ Vanilla extract 1 tsp
♥ 4 egg yolks
♥ Sugar 100g
♥ Corn starch 30g
♥ Unsalted butter 25g
♥ Heavy cream 250ml
♥ Powdered sugar 20g
♡ Servings: 35 puffs (3cm diameter before baking)
♡ Preheated oven to 200°C / 392°F .
♡ Bake 10 min 200°C (392°F) -- 15 min 180°C (356°F) -- 5 min 160°C (320°F) -- 5 min chill in the oven
♡ During baking, do not open the oven! Otherwise the eclairs will fall off
