Ingredients:
Caramel:
85 grams of sugar. Melt over medium heat.
40 grams of butter.
Mix until smooth.
60 g warm whipping cream (33-36%).
Stir gently, the caramel will start to boil vigorously.
A pinch of salt.
70 g roasted chopped peanuts.
Let cool down
For 6 cupcakes:
1/2 part of a large egg (30 g).
70 grams of sugar.
50 grams of vegetable oil.
Mix until smooth.
45 ml milk.
55 g yoghurt/or sour cream.
80 grams of flour.
15 grams of cocoa.
2.5 g baking soda.
Mix until smooth.
Pour 2/3 of the paper cupcake liners.
Preheat the oven to 170°C and bake for 20-25 minutes.
Check it with a wooden stick - it should come out dry and clean.
Cooling down.
Cut out the middle.
Cream:
100g dark chocolate.
70 g whipping cream (33-36%).
Melt in the microwave or steam bath.
Mix until smooth.
200g mascarpone.
30 ml whipping cream (33-36%).
20 grams of powdered sugar.
Mix until smooth.
Add chocolate ganache and stir until smooth.
Place the finished cupcake in the refrigerator for 1 hour.
Drizzle with chocolate glaze
50g milk and 10g dark chocolate.
10 g refined vegetable oil.
Warm up.
20 g crushed peanuts.
