In our house growing up, making the Christmas Cake and the Christmas Pudding was always a tradition started in October. We always used my Great Grandma’s recipe and I still use it to this day. There is a tradition in England on ‘Stir it up Sunday’, where families would gather to take turns at stirring the Christmas pudding for good luck. Always clockwise (east to West) to signify the wise men coming to visit Jesus. Each person makes a wish whilst stirring. I’m not making a pudding this year, so we made a wish on the cake.
As I am not quite as organised as my mum or grandma, I usually end up making mine at the beginning of December. For this reason, I have adapted the recipe to suit my scatterbrain and you are welcome to use it if like me you leave it until the last minute.
I douse the fruit in alcohol for longer to give more chance for the fruit to soak up the boozy flavours and to give the cake a head start. It is after all Christmas and for that reason alone, why not indulge in a slice of satisfyingly, mischievous, decadence.
