My Favourite Mini Chocolate Chip Cookies of All time – I’ve been trying out a few of our local hot selling cookies and this recipe is far the closest and the best I’ve made by far. For the last few years I’ve been making Christmas fruit cakes as Christmas gift. This year for the first time I’m giving these wonderful cookies as a gift. They are so easy to make and super delicious. For those we are going to celebrate the festive events, do give this cake a try to impress your guest with this wonderful crunchy cookies. Enjoy!

Ingredients:
170g [¾ cup] unsalted butter, softened
150g [¾ cup] brown sugar
90g [½ cup] caster sugar
½ tsp salt
1 large egg OR 60g [¼ cup] plain yogurt
1 tsp vanilla extract
300g [2½ cup] all-purpose flour
15g [1½ tbsp] cornstarch
1¾ tsp baking powder
½ tsp baking soda
130g [¾ cup] chocolate chip
30g [¼ cup] dried cranberries, chopped
50g [⅓ cup] hazelnuts, chopped
Instructions:
1. In a large mixing bowl, add in softened butter, brown sugar, caster sugar and salt. Mix on high speed for 3 minutes until creamy, fluffy and pale.
2. Add in the egg and vanilla extract. Mix until well combined.
3. Sift in the dry ingredients in 2 batches. Fold in until combined.
4. Add in the chocolate chips, cranberries and hazelnuts. Fold in until combined.
5. Double wrap with cling film, with the first wrap attach to the dough. And one more to cover the bowl. Refrigerate overnight.
6. With a teaspoon scoop the dough and place it onto the flat pan.
7. Bake them in preheated over at 170°C/340°F for 13-14 minutes.
