To make homemade hard cheese from cottage cheese:
Curd - 400 g
Milk - 400 g
Salt - to taste (I added 0.5 tsp)
Soda - one third - half a teaspoon (first I add one third, if necessary I add more, but not more than 0.5 tsp)
Butter - 10-15 g (you can not add)
1. Put the cottage cheese in a saucepan, add milk, heat to a hot state until a light yellow whey begins to separate. No need to bring to a boil.
2. Transfer the cottage cheese to a colander so that all the whey flows out, add salt and soda to the cottage cheese. Mix. You can melt the cottage cheese in a water bath or over low heat, stirring constantly so that nothing burns. Under the influence of soda, the cottage cheese will begin to melt right before your eyes, the process takes several minutes, do not go anywhere and stir constantly.
3. Butter can be added to the resulting cheese for a creamier taste, but this is optional. If you want the cheese to be low-fat, you can not add butter at all.
4. Grease the form with butter, shift the cheese and tamp well. Leave the cheese in the mold until completely cooled. Take the cheese out of the mold.
