Ever dreamt of the perfect roast potatoes? This might just be the recipe for you. If you absolutely love potatoes, give this a go, and I promise you, you'll definitely end up loving it.

Recipe:
Potatoes - 2 lbs peeled (Yukon Gold if in the US, Maris Piper if in the UK. Good luck finding the right potato to the rest of the world)
Oil - 1 cup (Olive oil or any fat you'd like)
Garlic - 6 cloves (or to taste)
Rosemary - 1 sprig (1/2 tsp dried)
Thyme - 2 sprigs (1 tsp dried)
Salt (For boiling) - 3 tablespoons
Salt (Finishing) - to taste
Method:
1. Chop up your potatoes into big chunks, making sure that each chunk has a lot of edges. These will become the crispiest bits of the potato.
2. Place your potatoes in a bowl and let it sit in some water to get rid of the excess starch, changing the water every few minutes until it runs clear. Strain your potatoes.
3. In a pot, add in your potatoes, and some water. Add in your salt and boil on medium heat for 45 minutes, or until your potatoes are just about to fall apart (Might take a shorter time, depending on the type of potato that you have).
4. Strain your potatoes in a collander, and leave it to rest for an hour. This will help firm up the potatoes so they don't fall apart when transferring to the roasting tray. In addition, the surface of the potatoes will dry up a bit, contributing to the crunchy exterior.
5. Preheat your oven to 350 degrees F. Line your roasting tray with some foil. Add in your oil of choice, and transfer your potatoes to the roasting tray and mix to coat the potatoes in oil. Place the roasting tray in the middle rack of the oven and cook for around 50 minutes to an hour, flipping the potatoes every 20-30 minutes so that all sides get a chance to crisp up.
6. Afterwards, take out your roasting tray and crank the heat up to 450 degrees F. Add in your garlic, thyme, and rosemary to your potatoes. Place the roasting tray back in the oven and cook until the potatoes are golden brown (around 15-20 minutes).
7. Take the roasting tray out of the oven. Transfer the potatoes to a bowl, season it with some salt, and enjoy!
