Recipe for Clear Glass Potato Chips. Beautiful food garnish.
Ingredients:
2 Large Russet Potatoes
1 Cup of Chicken Broth or Stock (optional)
2 Cups of Water ( 3 if not using the Chicken Stock)
4 Tbs of potato Starch
Rosemary and Thyme
Salt
Vegetable Oil for frying (avocado oil recommended)
"CORRECTION: For the puffed chips the oil should be at 375F- 190C"
