Recipe for Cake Roll "Christmas Stump" (1 cup = 250 ml).
Preparation of cream:
Yolks (3 pcs).
Sugar (45 g / 2 tbsp).
Corn starch (20 g / 0.7 oz / 1.8 tbsp).
Vanilla tincture (1 tsp) or 1 tsp. vanilla sugar.
Warm milk (180 g / 3/4 cup).
Cook over low heat, stirring thoroughly, until thickened.

Let the cream cool.
Let's start preparing the biscuit:
Warm milk approximately 60°C / 140°F (45 ml) + Vegetable oil (40 ml / 2.5 tbsp).
Yolks (4 pcs).
Sugar (25 g / 1 tbsp).
Slowly add milk mixture and stir.
Flour (75 g / 2.6 oz / 2/3 cup) + baking powder (1/3 tsp).
Stir until smooth.
Egg whites (4 pcs).
Sugar (70 g / 3 tbsp), add in two stages.
Beat until fluffy and bird's beak forms.
Mix the prepared mixture with the beaten egg whites, adding the whites in three stages.
Pour the batter into a baking tray or 11.8 x 15.8 inch (30 x 40 cm) pan.
Bake at 170°C/340°F for about 13-14 minutes, no convection.
Prepare the impregnation for the biscuit:
Hot water (100 ml / 2/5 cup),
Sugar (70 gr),
Vanilla tincture (1 tsp).
Prepare raspberry jam or use ready-made jam:
Raspberries (250g/8.8oz).
Sugar (100g/1/2 cup).
Pectin (5 g/1 tsp).
Let it heat up.
Take out the biscuit and let it cool a little.
Lemon juice (1 tsp) or a pinch of citric acid.
Bring to a boil and cook for 1 minute.
Strain through a sieve.
Let the jam cool.
Cut lengthwise into 5 equal pieces, 5-6 cm (about 2 inches) wide.
Soak the biscuit.
Spread the jam.
Let's continue preparing the cream:
Stir the custard (at room temperature).
Add butter (room temperature) (150 g / 5.3 oz), in 3 stages.
Place the cream into a piping bag fitted with a flat tip.
