Bacon Marmalade
Beef Marrow with toast points and bacon marmalade is a great appetizer.
Did the beef marrow in the new wood fired oven. I’m very new to the wood fired oven, still learning basic cans and cants but will be introducing successes and failures on the wood fired oven going forward.
This particular appetizer has been a huge hit at family and friend’s gatherings for many years.
Will do a separate video on the beef marrow, but it is very easy. Roast it in the oven at 450 for about 20 minutes. You can test if the marrow is tender with a toothpick or small skewer.
You can top the marrow with a bit of gramalita as you would for ossobuco, but in the wood fired oven, it may just burn off if you add it too soon.
Enough about the marrow, the star of this show is bacon marmalade which is so amazing and so versatile. You can put it on literally anything.
1 teaspoon olive oil
1 small Vidalia onion, minced
8 ounces slab bacon, cut into 1/4-inch cubes
1/4 cup light-brown sugar
2 tablespoons maple syrup
Pinch cayenne pepper
