In years past I've spent much time in France. Amongst the most delicious dishes eaten there was authentic French Onion Soup! With a bit of patience, it's very easy to make and completely worth it. ENJOY!

FRENCH ONION SOUP INGREDIENTS:
- 2.2 lbs of Yellow Onions (4-5 onions)
- 2 tbsp of Salted Butter (I use Kerrygold brand)
- 2 tbsp of Extra Virgin Olive Oil
- 1 glass of Sauvignon Blanc (about 1 cup)
- 1 tbsp All Purpose White Flour
- 1 liter (about 4 cups) of good quality Organic Beef Stock
- A few sprigs of fresh Rosemary & Thyme. Tie together with Kitchen Twine to make a 'Bouquet Garni'
- 1 Vegetable Bullion Cube
- 1 French Baguette for slicing
- 1-2 Garlic Cloves for rubbing on the Baguette slices
- 1/4 Cup of French Cognac (or Brandy)
- 4 oz of Aged Gruyeré Cheese, grated
- 4 oz of Aged Comté Cheese, grated
- 2 tsp of Sea Salt (or to taste)
- 1 tsp of Ground Black Pepper
